Whichever way you go, use Berserker stat gear, with maybe two or three Assassin stat trinkets to get critical chance to 70%. If you wanna get ready for Fractals and Raids, which is PvE end-game, you can check discretize and snowcrows sites for builds. That said, in Guild Wars 2, there no really tanking or healing mechanics like the other MMO's, your stats and how you build you character shapes that.
Two classes may be capable of performing a certain role, but if it's a role you plan on spending a lot of time in, you might prefer one class over the other simply because one class will provide more flexibility in how you approach your build, while another class will require 2/3rds of your build always be the same to be capable of that role.
Guild Wars 2 is an amazing game that I wholeheartedly recommend. It is an insanely vast game with so many choices and options. With 9 classes, and many different weapons for each class, all of which play differently, it can be hard to figure out what class is best for you. It can even be hard to figure out how to play. The best open world build by far is the standard raid quick fb build but with litany as a heal. 31k hp, full heal with litany, quickness for 5 in case you do meta events while having perma quickness for himself even without alacrity solo. Could even take soj for vuln. For might just take golden dumplings. 1. WvW roaming. Around 7-8 again. So as a measure of whether it’s diverse, the answer to me is no…and this amount is somewhat universal across all the classes not just thief. Most builds that you can make in this game are not useful, and or are so similar to one another that the diversity is considered low.
Condi Herald and condi Renegade work well, but in a different way: Renegade has higher dps and specially single target damage, plus can be used both at mele and range, and has a strong bar breaking game; Herald has better sustain and mobility while in combat, but is not as great at breaking defiance bars.

Solo PvE is not really hard, especially if you go toward a decent build for your class. So the choice should be more about what you want to play.

Preferred Healer in Raids. Tempest (Elementalist ESpec) - Best sustained healing (highest HPS), versatile boon support with mix of offense and defense, access to Elemental Auras for the team. Currently sees more use as a Kiter for certain Raid Bosses, works perfectly fine but isn't really preferred in many cases.

The Support Scourge is a necromancer build that can give barrier to its allies in WvW squads to keep them alive while also providing boons and ripping boons from enemies. Great burst and sustained damage more than make up for the fully melee requirement, squishiness and forced movement. Very strong in fractals and even stronger in raids. High damage with good mobility and being actually fun to play (unlike Staff Weaver) makes this among the best choices for small hitbox bosses.
Another core aspect to the PvE end game of Guild Wars 2 is strikes and raids. Strikes are ten player raid-like activities that are meant to be an introduction into the more difficult raid encounters at the end game.
